Chili rate thread. start with mine, do your worst if so inclined.
>steak not ground meats
>rehydrated dried chili not chili powder
>flame roasted anaheim (no hatch in NY)
>yuengling black and tan
>2 diff chilis, 3 diff peppers
>red, black, pinto bean
>chunk dark chocolate
>7 hour simmer

Too many beans. I like beans in chili, but pinto or pink beans are the best. Kidney and black beans don't break down enough. Also, I prefer using coffee instead of chocolate for my extra depth of flavor.
Did you not use any onion or garlic? Chili needs that.

thank you anon. i chose black and tan because i thought it sounded good. i wanted a stout beer but was thinking it could be overkill and the b&t seemed like a good compromise.

For 3 pounds of meat (And related amounts of the other ingredients), I usually add about one cup of good, strong coffee.

is there a diff between chocolate and coffee for you?
i think you lose the chocolate taste after a long cook time, but it adds a good depth to the chili and gives the chili a very pleasant aftertaste. i would assume the coffee would do the same?

Yeah, the coffee flavor melds into all the other flavors, but it definitely gives it a rich depth. I use my normal coffee, but I brew it extra strong. Whatever beans I happen to have. But, I do buy quality beans. I can subtly tell the difference between chocolate and coffee in my chili, and I prefer the coffee flavor, but that's just me.

You're welcome! Chili is one of my favorite foods, all the way back to childhood, so I can get pretty passionate about it.
If you like your chili spicy, see if you can find these little shits, chile pequins. My uncle, who was an actual horse whisperer, got me crumbling these on top of my bowl of chili when I was a kid. They're hot, so be judicious in how many you use.

i do like it a bit spicy but the wife is a yank so i have to watch what i put in. ill keep an eye out for those, maybe whole foods carries that kinda shit.
i actually threw in 1/2 can of chipotles with adobo and had a little spice. if it were up to me i'd add some fresh cayennes and serranos for heat. the jalapenos up here are fucking milquetoast.

Yeah, I always add some to my chili. They have an ideal amount of heat for the fresh chile ingredient.
I've used chipotle in adobo before, but I actually prefer dried chipotle instead. Just a personal preference. I treat it the same as the other dried chiles I add.
