this is my version of a mexican INSPIRED pizza, I call it pizza de trompo

I made everything but the cheese from scratch

its a detroit style deep dish with mozz, al pastor (w/ muy authentico marinade recipe), grilled pineapple, sauteed red onion, a homemade roasted poblano/jalapeno/avocado ranch, topped with a bit of soap plant

i expect a lot of hates on my meme pizza and for entering a pizza in general but it was delicious and one of my top 3 pizzas ive ever had

Roast and skin the peppers.

I was using my torch to burn the skin. It works; it burns the skin. But really when you're roasting peppers you're cooking them as well. Also the skin doesn't slough off as all with a torch. Took them out to the grill and did it the normal way. Torch is great for toasting dried peppers, though.

Anyhow, I saved a bit of the blended stuff to add at the end. A trick I picked up somewhere. I think from the gook at the gook market, regarding Thai curries. The idea is that, if you are not picking it up, is that you get some flavors from the cooked vegetal and also different flavors from the raw veg.
Also, I would like to ask what my upstairs neighbor is doing. Does anyone know? It sounds like he is on a six foot ladder, dropping really large extension cords onto his floor ( my ceiling).

Time for my entry, tamale pie. It was a bitch to make, because Mexican ingredients aren't very common in Europe. Couldn't find lard so had to use butter. In the end, it turned out pretty good, could've used a thinner crust and more filling though, but it was nice with some salsa. It looks nice at least. Served with the greatest authentic Mexican beer (that was made in France).

I suggested "mexican without tortillas" originally, yes.
Then someone said that people would sperg about muh authenticity. Then I acquiesced that it could be Mexican-inspired and that I didn't wanna just see food X shoehorned into a tortilla. Numbaz didn't take the bit about tortillas or not in when choosing this month's suggestion, though.
I was gonna make something I was planning to call tamalesaña. It was gonna be kinda similar to >>9556091's tamale pie, but in multiple layers, like a meat-and-corn-dough Vienetta. I'd been very unwell so wasn't able.
When I was feeling better, I saw Snowman's entry and had a cartoon villain moment ('curses! foiled again!'). Then I remembered someone was talking about Chamorro food, which is completely Mexican inspired. And I know Chamorro food. So I made titiyas yan kelaguen uhang but relabeled it as prawn ceviche and coconut tortillas, forgetting I'd originally suggested 'no tortillas lol.'

AFAIK, octopus should be cooked before eating, always. I know Koreans eat live and wriggling octopi, but I'm not aware of any other cultures which do that. It's always cooked. Always.
I boil water, add a whole, cleaned 'pus (to me, cleaning involves beating the fuck out of it like it owes me money then also brining it in solution that includes papain), then bring the water back to the boil.
Next, i turn off the heat and lid the pot and have the bastard sit there to think about what he's done. He knows what he did.
Finally, I take him out and rinse in cold water then drain and dry well before cutting him up and dressing him with lime juice, minced red chilli, mince onion, chopped coriander and prawn salt and let him marinate in the fridge for, like, a half hour or so.

Inspired by huaraches
Tossed flank steak in a homemade hot sauce (loads of chillis and garlic, with a bit of vinegar and homegrown tomatoes) supplemented by some tomato puree so the spiciness wasn't too strong and a bit more oregano.
Crumbled feta on top with some little gem lettuce and diced tomatoes.

The huarache part was cornmeal + few tablespoons of salt and oil, made into a 'dough' with water. Flipped 'em like pancakes in a wok. Masa harina is impossible to find here.
