This is not true in a lot of states. Some states, like mine, give no exception to the minimum wage so everyone who gets tips makes that on top of their hourly, which is at least $11 an hour.

I always considered tip a luxury tax, as in, I decided to come to this establishment in leiu of spending the time to cook, plate and serve food at my own house. The only time I've ever complained is when the service and the kitchen sucked, which was rare.

I make about 70k/yr as a 24 year old. I constantly get shitty service because I look really young, and they think I will leave a shitty tip anyway. When I actually receive good service, I leave a good tip about 25%, but if it's just average/kinda bad, I keep it around 15%. I found that I received better service outside of the US, and they don't expect a tip, since their employer pays them a livable wage.

Yeah, it's really a broken system rife with racism and classism from every direction. Pretty sure in the US it dates back to the Reconstruction era where most waiters were former slaves. If tipping culture were removed here, two things are likely to happen: good restaurants will do better without making a noticeable increase in menu prices because servers are not incentivized to give exceptionally bad service to customers they are prejudiced against (thus driving them away), nor exceptionally good service to others (which very often involves unapproved comp'd items eating into profit margins); and bad restaurants will simply fail to make enough profits to stay in business in zombie-mode. The main proponents of tipping culture come from a few groups: servers who do very well under the current system (and evade a hell of a lot of income tax), shitty business owners who know they shouldn't be in the restaurant business, and rich people who are afraid of the implications of addressing the current minimum wage. Asuming an average party size and reasonable size orders, its makes sense when people spend their money in phases drinks, appetizers, food, desert. If you get everything with your main course, and skip desert it's considerably less work and obviously less spent. It's not perfect but it provides some basis.

Note: Tipping is a dumb practice to begin with, these workers should be paid a real wage to begin with. I say this as a resident of burgerland.

Worked in service for a few years and frankly enjoy my job since I work more involved with alcohol than food. Went from cocktail bars to a beer garden and it's fun to guide guests through suggestions and introduce them to something new. If the service is poor then gratuity should reflect that and it's whatever, but I average around 18-20% on most tabs. Annoys the shit out of me when our shitty servers gripe about being stiffed.
