Why do people sell things like this with the head still on? They've already cleaned and dressed it, how much more difficult is it to chop off the head? I lived in France for awhile and they almost always sold whole rabbit with the head still on; do people actually do anything with the heads? (Fish is obviously different.)

My grand father used to punch rabbits in the head to kill them in one hit. He had a mean jab.

He also seemed to enjoy himself very much when he had to kill 20+ in a row to go sell them to neighbours or others.
