I've been trying to get my stepson to appreciate mole for a while now, he's Hispanic so I feel like its part of his cultural heritage, but the savory taste kind of turns him away from it. How can I modify it to fit a little rascal's pallette while still preserving the authenticity?

Just to blast your lousy ass good mole isnt like what you find in stores, instead you will still need to redo at least a handful of steps to get it to be passable
First is toast fresh almonds and peanuts
Another is toast and process several drychiles after soaking them before passing them thru a strainer

Really mole usually found on store shelves is for children being far too sweet and lacks heat and flavor

If you don't want to do the typical soup/stew, I'll cook them down until most of the water is gone, then add a little roux to thicken it and season it like a meatloaf. Put it in a casserole dish and top with mashed potatoes or biscuit dough and a bit of cheese and bake until it's hot or biscuits are cooked. It's like a lentil cottage pie I guess, pretty good.

crockpot, carrots onions potatoes garlic, tbsp of cumin, curry, chili powder, whatever other spices you got. pour in water and beer and maybe some other shit you got in your fridge (vinegar? mustard? old wine? hot sauce? random salad dressing? fuck it)

turn on the crock pot and then tomorrow you'll have a pot of delicious lentils
