Sounds delicious, thanks for sharing.

After reading the description, I am thinking it reminds me of a fresh mexican cheeses queso blanco or fresca. Some of it can be tart, salty and either crumby soft like feta or easy to fry like queso para freir. Or would you say it's like ricotta salata?

I eat it, rarely. It comes in a pretty big sealed bag where I shop. If I could buy it in a little cilantro sized bunch, I'd certainly get it more often.

The good news is I think it's heralded as the next big superfood to be hyped. I'm seeing more mention of it in food and nutrition articles.

How do I use it? I buy it alternately with arugula and use them the same way, mostly.
Egg salad sandwich. Roast beef sandwich. Cream cheese wrap with other veggies, basically a salad shoved in a tortilla or lavash wrapper. Folded into an omelette, or chopped into a soup. It can be blended into a creamy dip or salad dressing to herb it up. It is part of that green goddess dressing mood, and awesome blended into cottage cheese as the dip.
