It makes it different. Whether you think it's better is a matter of personal preferance. There are various chemical reactions that occur inside the meat as it ages. This changes the taste of the meat. IMHO it tastes much better.

40 years ago dry-aging was the norm for all beef. It was changed because skipping the dry aging is faster and cheaper. Now cheap supermarket meat is not dry-aged but the stuff you'd get at a nice restaurant or a fancy steakhouse will usually be dry-aged.
