When I lived in Ithaca, NY there was a pizza joint that sold cheddar cheese + onion ring pizza. It was actually one of my favorites.

Provlone obviously, parm works great if you just grate bit of it just before the pizza hits the oven
Goat cheese, feta and blue cheese can all work great depending on the other toppings
Bit wilder choices, but I've had good success with smoked cheese and Mascarpone
