So here's what's involved with serving, because obviously, "Bringing the food out" is a bit more complicated than you give it credit for.

A good server is usually running at least 3 or 4 tables, more often than not, 10 or 12. A good chunk of the restaurant is being run by a single person.

All food is timed out exactly so it hits your table in the right order, drink checks have to be done like clockwork, often discretely.

We also have to bother kitchen staff to coordinate with all the other tables, which is always an issue on a packed weekend.

On top of that, you need to have every single dish on the menu memorized, know all the ingredients, and know everything that could cause allergies.

You also have to memorize the ever changing wine and alcohol list, and know the lingo for every mixed drink on the planet, so you can explain it to the bartender.

I've held office jobs, phone jobs, development jobs, and several other jobs since, and physically, it was one of the most demanding jobs I've ever had.

It absolutely is a real job, and there's something kickass about walking home with 500 bucks in tips on a good night.

On top of that, I saw countless people break and fall flat. It's a sales position at it's core, since your tips are almost always priced on your service, as well as how pricey your food is. Sell up the alcohol, and the high end dishes on the menu.

If you're shy, and not assertive, you make jack shit, and get the crap tables, and you're going to wash out fast.

You just notice the "bring out the food" part, servers stay, and are retained on "how well they can get you to buy food" part.
