Bring 8 cups of water to boil in a large sauce pan, add baking soda, stir then add potatoes and boil over high heat for 1 minute then drain. Take boiled wedges and return to now empty dutch oven over low heat and stir with a rubber spatula until until surface moisture has evaporated (less than one minute). Once done remove from heat and add 1 1/2 teaspoons salt and stir until a starchy past forms coating the potatoes. now remove and place on a drying rack to cool. In the meantime heat several inches of oil (enough to fully cover potatoes) in a dutch oven over high heat to 375 degrees. Submerge and fry until browned and crispy, about 20 minutes. Return to elevated drying rack for 5-10 minutes (yes this is necessary). Salt to taste or create dipping sauces such as redchimichuri and smoked ghouda bechamel to serve.

3-4 large russet potatoes, sliced into wedges
4 tablespoons olive oil
2 teaspoons salt
2 teaspoons garlic, minced, or powder if you're gay
2 teaspoons oregano and parsley, or Italian seasoning
½ cup shredded parmesan cheese
optional: cut up some nice rosemary.

Preheat oven to 375. Lightly grease a large baking sheet and set aside.
Place potato wedges in a large bowl. Drizzle with olive oil and toss to coat. In a small bowl whisk together salt, garlic powder, and Italian seasoning. Sprinkle potato wedges with the shredded cheese, tossing to coat, then sprinkle with the seasoning mixture.
Place potato wedges on prepared baking sheet in a single layer with skin-sides-down. Bake for 25-35 minutes until potatoes are fork-tender and golden. Sprinkle with freshly chopped parsley and dressing for dipping.

lay them skin side down in pan
roast for 20 minutes, turn them on their sides then roast again for 10 more minutes
take them out of the oven, crank oven to 500, brush the wedges with olive oil again and wait 10-15 minutes until oven is hot (the potatoes will cool slightly. this is fine. this is part of the technique)
put them back in the oven and let roast for 15-20 more minutes, periodically checking for doneness

Boom. Perfect oven fries every time
