I guess it's difficult for a restaurant to make a good one? I make them all the time and never have any trouble with "messiness" and the taste of well cooked and seasoned beef is godly. Especially when you put a good amount of tomato pasata and parmesan on it.

There's no reason why a restaurant would have trouble making a god tier meatball sub. The ingredients are cheap, it's easy to make meatballs and they have a large cushion for overcooking.

That said, I've never seen a meatball sub at a nice restaurant. It's always cheap little shitholes that have them (in my experience, anyway). I'd blame the restaurant itself well before I'd blame the concept of making a meatball sub.

Yeah that's what I mean, I've never been to a nicer restaurant and seen it on the menu. I mean I can somewhat understand why but man, you can make a godly sub and have it be nicely presentable if that's the issue.

I make mine with just salt, pepper, garlic, smoked paprika, and olive oil, sear them in the pan for a bit then let them cook the rest of the way in sauce. I make my own sub rolls and when all that shit finishes at the same time...

You need to overcook the meatballs a little bit otherwise they're going to taste sorta fluffy and undercooked - personally I hate the idea of intentionally eating something that makes me feel its kinda iffy if its going to give my food poisoning.

The sauce should be pretty rich, im going to say take some 4 Cheese sauce (ie, Hunts) and then add ground up grape tomatoes to it and cook that on low-medium for about half an hour.

Anyway, it's still a good sandwich, even if the meatballs do tend to get squeezed out. You just have to squash them so that they're already broken and don't move around as a bunch of monolithic solids.

I used to get them from Subway sometimes. Pretty good actually. The meatballs don't fall out because the sauce soaks into the bread and makes it soft enough for the meatballs to kind of squish into it. Eat it fast though, eventually the bread gets too soft.

I agree. I tried the subway meatball sub a couple of times and of course it is less than acceptable.

But I went to this obscure place in PA once, and their sub was so insanely good. they fucking converted me. the owner was italian too.
