I am autistic level with sandwiches, and have literally never went further than meat and cheese. What are some entry level sandwiches to makes? What goes good with what

just to get an idea of ingredients i use interchangeably when i make a sandwich
green leaf lettuce or spinach(both even)
pepperoncini(banana peppers)
mayo
red onion
artichokes
brown spicy mustard
a little salt and pepper
maybe some oregano if it's made with italian cuts
and sometimes pickles, either on the sandwich or the spear on the size
most of these ingredients keep incredibly long in the frisge

There's a sandwich vortex that occurs when you have decent tomatoes, shredded lettuce, cheese and onion. Add some turkey or chicken if you want. But tomato+lettuce+onion+cheese really moves things along.

My regular is chicken, sweetcorn and cream cheese on brown bread. Any sandwich with fillings like cheese or mayo benefit from something sweet or sour to contrast the rich taste of the fats.
Though honestly, I've never enjoyed anything quite as much as the homemade version of the egg mcmuffin. I suggest looking at your favourite store bought sandwiches and trying to recreate them.

I'm like you op. I don't eat most condiments and don't like tomatoes so my sandwiches end up being mostly meat and cheese.

Even if it's just meat and cheese it gets better if you toast it. Chicken, ham, and turkey sandwiches are good with thin sliced apples. I like granny smith. Besides the taste the apples add a nice crunch. Pesto is good. I had a jalapeño sandwich spread that was pretty good too.
