It makes more sense to me when people say pizza "pie" because it's sort of kind of like eating lasagna or a calzone. Not exactly the same but similar. You can try making one yourself, there are recipes around the net. Each place does their pies differently.

I don't have a preference, I have to be in the mood to eat either; or maybe I'll want a thin crust.

For a more useful answer, if you do ever visit Chicago I recommend Gino's East or Uno's. Of the big brands around here I've eaten Lou Malnati's (more sauce heavy) Gino's East (good ratios) Giordano's (buttery crust but too thick for my taste) and I've only had Uno's in Baltimore (A better version of Giordano's imo). I've eaten at other places but those are less chain and more niche.

The best pizza I've personally have had is Nancy's stuffed pizza, they're up in Lakeview.

Stuffed pizza is different from deep dish in that it has another layer of dough on it. To me they're pretty synonymous.
