This is Weeb food 101

Today we do miso soup

You will need

Instant dashi powder or kombu seaweed and Bonito flakes

Tofu

White or Red Miso

Wakame Seaweed

You can get most ingredients at a Japanese or Asian market. I go to 99 ranch market.

First step is to make dashi, I don't feel like making it so I'm going to use the instant powder.

But how you make it is you take 2 cups of water, and put a 4 inch piece of kombu seaweed in it.

Put it on medium heat and when begins to boil slightly take it off heat and then put in about 2 handfuls of Bonito flakes. Let it sit for 5-6 minutes and then strain it.

Take 1.5 cups of dashi stock, or if your using instant stock 1.5 cups of water and 1.5 tsp of instant stock and put it in a pot with some cubed tofu and bring it to a boil on medium high heat. Turn it down to low and let it simmer for a few minutes.

I personally put it back on the heat after taking out the kombu, the bonito can take the heat, the kombu gets bitter however.

After its been simmering for a few minutes take your serving bowl and put a spoonful of miso in it and a little bit of your broth, stir it in until there are no large clumps. When finished add another spoonful of of miso and a little more broth and stir again. I usually put in around 2 table spoons of it. Add all the broth and sprinkle on the toppings and you are done!
