So since I live alone, and have nothing better to do, I have decided to take up cooking as a hobby. I'm sure the question has been asked countless of times, but is there any info on where I could start, what to read or watch on youtube? Obviously not trying to recreate Gordon Ramsay's shit, but I want to learn how to make the best of what I make, since i do have basic cooking skills.

Learn how to cook an egg every way, then go from there.

etc. It's a cheap and easy way to cook, fail, cook again and learn. Then move on to vegetables.

I don't personally order over anything, however knowing how to cook it translate well to both vegetables and meats.

I live in a small apartment with a tiny kitchen, so I can only afford one small portable induction stove, so my skills right now are limited to pans and skillets, so I guess I'm looking for easy meat recipes you can do on a pan/skillet.

Gordon Ramsay is pretty straightforward actually, look at his easier recipes and try to cook them if you want something to start.
The biggest problem with cooking yourself is probably laziness and lack of kitchenware. I was prety reluctant to cook when I moved out, but eventually gathered experience and equipment. Stir-frys are something beginner-friendly and you will also only have one pan and one or two dishes to clean. Once you've got a feeling on how to handle the ingredients, it'll come more easy and you'll te less time.
Also, cooking two or more meals and reheating the next day comes handy if you live by yourself.
