the 'soak method' is meaningless. Just leave them under /running/ water for like 5 minutes or so. All you're doing is getting rid of the starch. Soaking them overnight kinda does that but running water will take care of it even better, especially if you empty it every few minutes.

I've squeezed some of the slices and did not want to throw them away. The remaining juice is released during the heating process which, in combination with the excess oil and herbs, makes a nice little sauce.

TexMex kitchen isn't too popular here which is why I always do my own seasoning blend consisting of:

Chicken tends to be terrible here unless you buy it from a really good butcher. It loses a shit ton of water that is added dudring packaging - whether you sear it or not. I've put the meat into a big pot and started of with medium heat. Once the meat lost a good amount of the water, I used a pan to cook it properly.

I always mix the veggies with the meat before putting the stuff into the glass boxes. I'd be mad to waste any of that sweet sweet juice.

As usual, 2 for the fridge, 2 for the freezer. Thanks to the lime juice the guac remains relatively fresh. Instead of sour cream i went for a mix of plain yoghurt (3,5%), olive oil, garlic, oregano, salt and pepper. Its less rich than sour cream - which is exactly why i prefer it.

Dump everything in, along with some stock, herbs, and some extra water. You really don't need the entire liquid base to be stock, because the flavors will permeate everything when all is said an done.

if you want scallops now's the time to get them, they're best in July and August. I think they're really easy to cook they just get messed up if you cook them too long like all seafood.

Just pat them dry and salt them, get a pan hot with olive oil, and get a good sear on each side and you're good to go. I even grilled 2 this time to see how they are and they turned out just as good
