you've got meat and aromatics for a flavor base, it's basically cooking in broth, you add creme fraiche and cheese and season to taste.

Made that before with Rick Stein's recipe, which is essentially the same (eggs, no cream) and it was stunning.

Second time around, I added some spinach at the last minute to wilt and it just gave a nice fresh flavour to it.
I also like lemon juice on top of this, to serve -- it goes well with the black pepper.
