Just an FYI if you modify it by swapping the Hollandaise for a Bearnaise then it becomes MUCH better, IMO. Of course both work equally well objectively, but a Bearnaise is a bit more complex-tasting.

You could try:

- Simple fried eggs: crack it over a pan with butter, add salt and black pepper, cook it, it's that simple, and when it's fresh and high quality enough, it's real tasty.
- Soft-boiled: and then eaten like pic related, needs extra fresh and good eggs, and quality baguette.
- Crêpes/pancakes: great way to use eggs and then you can invite people over.
- Meurette: soft-boiled and served bathing in a soup of wine, mushrooms, lard and plenty other good things, with again a good baguette.
- Omelet: eggs, salt and pepper, and depending on your tastes, grated hard cheese, bacon, mushrooms...
- Cakes. Lots of recipes.

It really isn't hard to eat eggs, I'm having more trouble finding enough for my consumption.

The trick to the perfect hardboiled egg is to boil the eggs in hot, but not boiling water.

You bring the water to a boil first, then turn off the heat and gently drop the eggs in and leave them for 10-11 minutes.
The water retains the heat long enough to keep cooking the eggs till they're perfect.
No more green, shit tasting yolks.
