Refusing offered food for reasons other than religion or health concerns is the height of rudeness. If one does not want what is offered, one should accept the smallest portion possible and surreptitiously dispose of it when possible.

If someone is offering me something I haven't tried before, I'll absolutely eat some (unless it seems dangerous, unsanitary, etc).
If someone is offering me something I've tried multiple times and I know I won't like, I politely refuse.

I would rather say to them that I don't eat this or that instead of making them think I didn't finish their food because their cooking was bad.
