you know "period" refers to the time of ovulation, not the act itself. So you can't eat a period, you can only eat an egg.
and since chickens ovulate pretty much non-stop their whole lives are basically periods

Same thing as a human period: the egg leaves the body. Just different mechanism. one flushes out unfertilized egg because no fertilization, the other gets rid of the eggs no matter what.

A period is actually the the result of the uterus shedding its lining. Ovulation isn't what defines a period, it's the shedding of the uterine lining. No shedding, no period.
You can ovulate without having a period, many mammals do this.
