Gas gives finer control when sauteeing and there's very little residual heat once it's turned off.

The best solution would be a combination induction/gas cooktop.

You ever live in a rural area? Well, everyone has gas ranges because of power outages.

Growing up, we would lose power for a week straight just about once a year. We had a generator, but powering a range/oven is quite difficult. I grew up about 90 miles north of NYC, so it wasn't even total bum-fuck.

I live about 20 minutes from Midtown Manhattan and I have gas range. My parents have it too, and my cousins who live IN Midtown have gas ranges, so I don't think it's only a rural thing.

Tbh I always thought of gas as being a luxury, while other stove types were for poor people.

Pretty much every apartment in NYC has gas because the buildings are so old that it's hooked up that way.
