Composition patty with 70% 96/3 beef, 20% ground pork jowl 10% bread crums, onion, spice mix.
Grilled
Slice of smoked ham.
Cheese. Whichever I got on hand.
Grilled onions.
Lettuce.
Jalapeño slices.
Condiments to taste and avocado if no cheese.

Toasted buns with sesame seeds.

Side of steak fries. Spicy ketchup mix.
Lots of beer.

80/20 beef
mix with some whorechester sauce, a packet of liptons onion soup mix, and some shredded cheddar cheese (makes a nice crust)
make small patties, maybe 4 oz and thin
pile onto toasted buns with lettuce, tomato, mayo, and spicy brown mustard

85/15 fat ground, salt and pepper to create a crust, pan sear on each side until medium rare/medium, toast bun, add mayo or mustard. That's it. Best things in life are simple.

Small (as in short/low profile) soft bun, mayo both sides

1/4 lb. patty of 80/20 cooked medium rare
Thick slice of American cheese (the only place I like it)

Condiments: a little ketchup & mustard, maybe some diced onions or a smear of relish

2 slices of bacon, chopped
Lettuce (iceberg, chopped - it's only there for the crunch)
Single thin slice of tomato (has to be thinner than the cooked patty)

Condiments go under the patty, the BLT components go above. And the burger is pressed (not like panini press, just a little squeeze on the board to firm it up) and cut in half once assembled.

Designed to that you can take a bite and the rest of the burger will (mostly) stay put. Too many bad burgers have gone to smash on me too often.
