There are people of all backgrounds in the customer base so if the guy wants to run a successful business he'll do well not to get anyone sick. Since it's a hot coutry people are bound to get sweaty but generally the work surfaces and the cook are cleanish.

All you have to look for is if the place does good business or not. If it doesn't the chances of people using 2-3 days old produce increases. As for the meat, it's usually cooked to an inch of it's life before serving so there isn't much to worry about.

He's sauteing liver with onions, green peppers and tomato. Some add Jalapeno or the tiniest little bit of garlic. A truly underrated dish in the West. Of course the Arabic classic, Salt, pepper, and cumin is there as always. Lemon and hot sauce are a must for any respectable kibdah (liver) sandwich. I personally like to add a dash of balsamic or red wine vinegar. Melted cheddar cheese is the new hot thing, rightfully so.

I'd say it's easily my most favorite organ, only if it's calf camel or lamb liver. Cow's, which seems like the only one available in the U.S. is not so much. And oh it's ridiculously easy to overcook.
