So I've got a decent amount of chills that Im about to harvest. Too many to use in every day cooking. So I want to know your favourite ways of using chilis. Im probably going to make hot sauce and tomato and chilli chutney.

What else can I make that will keep for a long time?

Dry them.
I have several home-dried foods. You don't need any special equipment or anything, either.

I'm a huge fan of pickled chillis. My uncle makes excellent ones by starting them off in neat vinegar to bring the heat down to the point where they can be eaten on their own before finishing them up in a 50:50 vinegar/brine mix.

This. Dry them and then you can toss 'em in the blender or food processor whenever you need chili flakes or powder.

You can also pickle them as well as make pickle jam. Hot sauces & pastes are another great idea.

You name it chile's are good in it, get your hands on some chocolate habaneros, it's almost time for them. It's a sliding window in the NE starting from between late September to mid October and lasting about 3 weeks, the duration varies too.
