I was in Rome a few months ago, and I definitely wanted to try out some real Italian pizza. Italian food is simple, and subtle in its flavors. I dig on some Cajun food but thats cuisine which is really in your face with big flavors and spices. Great - but if you are looking for stuff like that in Italian cuisine you'll be disappointed. Its more about how simply fresh everything is, basic but good tasting stuff.

Ascolana olives are incredible if you haven't had them before. Other than that and the usual pizza/pasta, find a nice cafe and get a coffee granita. I think you'll probably be content with the classic dishes though, Italian food isn't really about trying a bunch of crazy things.
