What's for breakfast?
I'm trying to learn to work with herbs and spices so I've been stirring them into my scrambled eggs. Today I used basil. Thus: four slices of bacon, four scrambled eggs with garlic and basil, and a sliced, fried roma tomato.

Those eggs look very unappetizing, as do the tomatoes. The bacon looks perfect though. Do you use a type of weight to keep the strips from curling?

I'm starting to play around with spices and scrambled eggs too and I had this great discovery last month:
-Thyme, sage, and scallions (white part included), mushrooms, and eggs
- Chop the herbs coarsely
- Slice some mushrooms of your choice (I like baby bella)
- Cook the mushrooms with some butter in a pan. Add in a bit of chicken stock if you like.
- Whisk some eggs and mix in your herbs. Season with salt and pepper as needed.
- Add the mixture to your mushrooms and scramble away.

It's like my go to breakfast now when I can't think of anything else to eat.
