I rarely made fried rice, and that few veggies (especially with carrots in the mix) in something like pot pie or whatever can get way too sweet.

you definitely don't need ginger, fried rice is about using whatever you have lying around to make something hot and filling. it is a dish that's almost impossible to make inauthentically
