What type of vinegar do you use? I usually get white wine vinegar. It's fairly neutral without being too acidic like apple cider.

I generally dislike balsamic vinegars, because they're often too sweet.

It is un-ironically one of the most important culinary inventions, as it's one of the first useful preservatives. While salt had been used for millennia it was expensive, only really worked on some foods (meats & fish mostly) and naturally made the thing being preserved incredibly salty. Vinegar allows us to start preserving vegetables & other food stuffs, without introducing salt, which improved our diets, encouraged us to over-produce summer crops and kept people alive in winter.

Vinegar is possibly one of the most useful but most overlooked discovery/invention ever.
