Oil, 1½tbsp
Beef, cut to bite-size, 100g
Water, for blanching
Tenderstem broccoli, 200g
Garlic, thinly sliced, 2 cloves
Oyster sauce (or mushroom sauce), quarter cup or so

Heat half the oil in a pan.
Add the beef.
Stir fry until coloured, but not cooked through then remove from the pan and onto a bowl and set aside.
Bring water to the boil; meanwhile, cut broccoli stems away from the leaves and florets.
Cut stems into bite-sized pieces.
Add stems to water.
Wait 30 seconds, then add florets to water.
Wait 30 seconds, then add leaves to water.
Wait 30 seconds, then drain through a strainer set into a bowl.
Drain the bowl and place the strainer back into it.
Place the strainer and bowl under cold, running water.
Rinse, drain the bowl and repeat 3-4 times to cool broccoli completely.
Drain and set aside, separating stems, florets and leaves from one another.
Heat remaining oil in the pan.
Re-add beef, leaving its cast-off humours behind, and stir-fry 30 seconds.
Add broccoli stems and stir-fry 30 seconds.
Add florets and stir-fry 30 seconds.
Add leaves and garlic and stir-fry 30 seconds.
Add beef humours and oyster-or-mushroom sauce and toss to coat.
Serve as accompaniment to rice.

Seriously, it's one of the classic Chinese cooking sauces, in addition to sometimes being used as a condiment. Look through any collection of Chinese recipes and you'll hit it before long.
