I'm about to eat vegetables for the first time.

How do you cook spinach for maximum nutrition and taste? I've never cooked vegetables before, I need this because I got really sick.

Yesterday I decided to just microwave the spinach. I read somewhere that microwave doesn't involve taking away vitamins because of its short cook time. No water and boiling means more nutrients are kept.

You can heat food with a microwave. Here in the USA there are differing agendas and you always have to follow the money. Microwaving will not harm any nutrients in food, it simply excites the water molecules in the food thereby heating them up, it doesn't destroy anything.

It's like this crap with obama blocking an oil pipeline, follow the money, he's getting a lot of money from the train instrustries and CAIR to keep the USA off of North American production.

Idk what he's talking about, but it really is crazy how much a healthy, fresh meal can change a person.

If you've gone your'e whole life eating fresh food then you wouldn't understand. My previous job had all-you-can-eat, prepared fresh, 24/7 and it changed my life. I ate mostly frozen food and fast food before that. Recently I got fired and slipped back into my old ways for about a month. I told myself I need to learn to cook and was so surprised at how different I felt after eating fresh food.

My whole body felt warm, and I had a lot of positive, creative energy. I'm about to go grocery shopping again and I feel really excited.

If you like green soup try out split pea and ham soup, that stuff is crackin' awesome.

That's one I've never made for myself, I've just gotten it at restaurants or had it from a can... this stuff from a can isn't too bad, especially when I add other stuff like black pepper, garlic, and some diced onions and use some italian bread for dipping into the soup. I like it thick I don't add as much water as the instructions call for, that's 1 can of soup to 1 can of water, usually I do 2/3 of a can of water.

It's pretty damn green.

Just get eating vegetables, OP. You're right to consider cooking methods, but don't get too hung up on discovering the perfect method before you start. Just get those veggies down your neck, if you're eating a few different kinds daily then you'll be pretty well covered and it doesn't matter that much whether steaming is marginally better than stirfrying, so long as you don't boil everything to death.

Roasted vegetables are pretty good for people who don't like veg because they're thinking of the more bitter, grassy-tasting stuff. Cut up some sweet potato, carrots, parsnips, etc, into chunks or wedges, toss them with a little oil and some salt and pepper, throw them in a baking tray and roast until they're soft. The flavours are quite rich and substantial and slightly sweet, so they're good for even picky eaters. Soup is amazing, you can blend in tons of extra vegetables. Raw carrots, cucumber and bell peppers are nice as snacks with a reasonably healthy dip. Avocado is very good for you and you can add it to a sandwich instead of butter or mayonnaise due to its rich, buttery texture. The fat content is quite high though, so don't eat them by the dozen.

And if it turns out you really hate spinach, put a few handfuls of raw washed spinach in a jug, add a small glass of juice, and blend it up with a stick blender. Massive pile of spinach, instantly reduced to one drinkable glass without even affecting the flavour. Don't do that instead of eating vegetables, but topping up your intake with one glass a day should be fine.

Another thing you can do OP is make chicken noodle soup, take a bunch of spinach, rinse it off then throw it in the soup once it's done.

The remaining heat will cook the spinach without harming it's vital fluid nutrients.
