Picked up a bottle at Costco on sale for $25. It's not very complex, peppery nose, smooth, lots of wheat but the taste disappears really quickly and doesn't linger at all.

I much prefer pic related.

Actually, I'm Asian and I can't drink a shit load of alcohol or else I get red faced and feel like shit. But I still enjoy drinking socially. They're just labels that indicate area of origin, not the style they were produced in. Scotch is whiskey made in Scotland, bourbon is whiskey made in the United States. There are also a set of standards associated with each. You can have bourbon in a scotch style, and you can make scotch in a bourbon style.

'Traditional' scotch tastes literally like dirt (because they use dirt to flavour it, literally), but that doesn't mean they all taste like dirt.

For example, 14 yrs Glenfiddich rich oak is made with new oak barrels, just like bourbon, and has no 'smoke' (i.e. dirt) flavours.

Not really, considering that the pertinent legal requirements are mutually contradictory (bourbon has to be 51%+ corn, scotch has to be 100% malted barley. Also, scotch is usually aged in used barrels, which impart some of the flavors of bourbon/rum/sherry or whatever, while bourbon has to be aged in charred new oak)

You can make changes to the mash bill of bourbon or to the malting or aging process of scotch that can affect the flavor of the spirit, so obviously some scotches will be peaty, some floral, some medicinal, some bourbons will be peppery, some super-sweet, etc but they are always going to be fundamentally different products.

If you're living in Europe you're already paying too much for bourbon (no tax advantage from a domestically produced spirit, so it's going to be priced similar to scotch), so might as well order something mid-end from online.

If you can find Pappy Van Winkle or BTAC (George T. Stagg, Eagle Rare 17, Thomas H. Handy, etc) and it's at a price that doesn't immediately make you want to murder someone, you can always try that if you want the highest end bourbon.

Everyone says Pappy Van Winkle. I'm not much of a bourbon snob, though. It's a workhorse spirit designed in the frontier with limited resources to get the job done and done fast.

If I'm spending $50+ on a bottle it had better be scotch or cognac.

For bourbon I like Buffalo Trace, Four Roses, Basil Hayden's, etc.

Wild Turkey is also very good.

I don't like Maker's Mark, though.

At bars I'm fine drinking the rail bourbon, but if they have like, any scotch at all, I'll probably order that instead.

The defining characteristic is the grain used. Scotch uses malted barley; bourbon, corn. They were made with the predominant abundant resource available.
