EXACTLY THIS + lather the outside layers of the sandwich (so the top of the top slice and the bottom of the bottom slice) with spreadable butter. You can also soften regular butter in the microwave by warming it for like 2-3 seconds until it looks like it's starting to melt.

Then Just put the buttered slices of bread onto a pan at medium heat and cook until you've reached your desired doneness (just check it often)

Spread both sides of the bread with whatever you're using, and put them in the pan on low until they're crisp. Flip one, put cheese on it, put the other one on top without flipping so that the uncooked sides are on the outside. Cook as normal.

Butter the outside of the bread before grilling it, also on the outside sprinkle minced green onion flakes on it. It gives a subtle flavor to it. (needs to be green onion I tried normal onion flakes and was not good)

Something about multiple different chili peppers in the same thing doesn't go too smoothly with my guests, but it's probably the slight variations in flavor between each of the milder ones not blending too well with their palates along with different and unexpected areas of their mouths being hit by warmth that they're not accustomed to. These seem a bit mild for me if the chili peppers lose as much heat as they do when cooked in a frying pan, as well. Either way I'm trying them out for myself later.

I normally add ham to mine, not packaged ham with water added, but spiral ham cooked with brown sugar, and I used smoked cheddar. But I don't eat grilled cheese often, normally only after thanksgiving, or Christmas, when I have leftover ham I need to get rid of before it goes bad. As for smoked cheddar I keep it in my fridge, find a good source, I have a farmer in town who makes his own chedder and smokes it himself, shit is so much better than anything you can buy in a store, trust me, you don't want a name brand for cheese, you want something that was made within 100 miles of where you live, itll change your outlook on cheese

Butter 2 pieces of bread.
Preheat skillet to medium.
Make sure pan is straight or you get uneven browning.
2 slices of cheese of your choice (I use Munster)
Put buttered slice of bread in pan.
Put cheese on that.
Put other slice of bread on top of cheese (butter side out).
Wait until bread doesn't stick to pan.
Flip.
Wait until bread doesn't stick.
Flip and cook until color you want is achieved.
Done.
Enjoy.
