Lately i've experimented with trying food from other countrys i never had before but are extremely popular in those countrys.
I started with making a pumkinpie and a turkey for christmas. Today i made mac'n'cheese (stovetop and very minimalistic, but i liked it).
Now i'm on the hunt for the best strawberry-cheesecake-recipe. I always search for goat recipes so i can give the foods a fair chance.

You can buy pork fat in stores in Germany. It's just a slob of 100% fat that you then cut into small pieces and fry in the pan. We serve them together with the potatoes and the kraut and put the leftover fat juices that come out (it's quite a lot) on our breakfast breads instead of butter.

The ham is not roasted, it's kind of slow cooked together with the sauerkraut over a few hours while letting the water evaporize.
Takes around 4-5 hours minimum to get it to that stage. It's really tender after that.

Rösti is basically grated potatoe, you first toss it in a big pan with some butter or porkfat until it is crispy brown. Add in chopped onions and bacon and roast it. Then you fold in grated cheese (i suggest gruyere) and form a big kind of a pie inside the pan. You let it sit until it is crispy on one side. Then you put a plate on top, turn the whole thing, slide it pack into the pan and roast the other side. Then you cut it in pieces like pizza. Usually it is served with bratwurst and onionsauce (onions. Red wine and bratensaue).
If i weren't so full from the mac'n'cheese earlier, i'd like to have some rösti too.

There are a ton ov variations to it. But berner rösti is best. Cheese, onions AND bacon. What more can you ask for. I usually make a big fresh salad with it, because the bratwurst stuff is almost too much for me.

Actually deep down.. I use it as an excuse for not being available. I kind of like that lifestyle where I'm only available when I choose it and I don't have to fuck around with people calling me all the time.

here's a basic recipe. I've seen people replace the fat with crisco, but that sucks. I guess the closest thing you'd be able to get would be either deer or cow fat. You can also mix meat into the recipe, and I once tried it with polar bear and that was probably the tastiest thing I've ever had. But that's not really allowed any more.


1 cup reindeer, caribou, or moose fat (back fat)*
1 cup animal oil (seal, walrus, or whale), divided
1/2 cup water or 2 cups loose snow
4 1/2 cups fresh berries

Grate or grind fat into small pieces. In a large pot over low heat, add fat and stir until it becomes a liquid (the fat should never get hotter than it is comfortable to your hand). Add 1/3 cup seal oil, mixing until it is all liquid. Remove from heat and continue stirring the fat in big circles.

While continuing to stir at a steady rate, add 1/4 cup water or 1 cup snow and another 1/3 cup seal oil. As fat slowly cools and starts to get fluffy and white, add remaining 1/4 cup water or 1 cup snow and remaining 1/3 cup seal oil, continuing to stir.

When the Akutaq is as white and fluffy as you can make it, fold in berries. Form into desired shape. Cover and freeze to firm up.

traditionally the only sweetener you would put in is fresh berry's (mostly because that was the only sweetener my people had), but you can add sugar and other sweeteners and it would turn out pretty good. The english term for the dish is eskimo ice cream. But like I said before, you can also make it with meat instead of sweets and it'll be good.

I don't think there are any you would be able to replicate. Most native alaskan food is pretty basic, and revolve around the local wildlife. But there are some weird recipes where you leave seal meat soaking in blubber for 2 weeks and then eat it raw. And if you can get your hands on some fresh, properly prepared muktuk (whale blubber) I recommend you try it out.
