This one was from a couple of nights ago: sauteed spinach and onion with raw shallot, goat cheese, tomato, and white balsamic on homemade ciabatta.

He's likely American. To them, 'goat cheese' is a creamy food made from nanny's milk whereas to the rest of us, 'goat cheese' is about as specific as 'cow cheese' is.
It's somewhat uncommon to find goat cheeses in America that are anything but cream cheese.

Caprino semiduro di S Giorgio or caprino semiduro emiliana. I don't know how easy they are to find outside of Italy, though. Even in Italy, they're a bit difficult to find a few hundred km away from their place of production. The first is from Calabria, in the south, and the other is from Emilia, in the north.

And put a tablespoon of butter in it on med/high heat put sandwich on it and cover pan with tin foil, about 3 mins per side and with the foil you can guarantee cheese meltage

black olives (the good, shriveled up and salty ones)
good tomatoes
optionally some onions

sprinkle olive oil and balsamic vinegar on that

-healthy swab of mayo
-thick 3/4 cut of beefsteak tomato
-salt and pepper on the mayo
-some whole grain bread
-(ham/bacon optional)

I rarely use that one now but i have made a lit of those sandwiches.
