Pineapple

I love pineapple on pizza but I think the juices would make a calzone too soggy since it doesn't get open air heat.

>> No.5744608

Every "soft" cheese is pretty bad with a calzone, because it doesn't cook properly in it. That's why mozzarella di bufala is never used neither stracchino is. Yesterday I ate a calzone stracchino and salsiccia(sausage) and it was moist.
Seriously, avoid.

Is pineapple in pizza a thing in America? Sweet pizzas are rare in Italy, and they usually are the cooked dough with nutella or with apples and sugar.
At least, they are considered as desserts.

Its actually a pretty popular topping here in the states.

Most commonly served with ham or Canadian bacon depending on your locale.

It's not a sweet pizza.
it still has tomato based sauce and cheese.
often it'll also have ham and you can choose to add any other typical pizza ingredients.

I usually avoid mushrooms because they don't cook that well inside of the calzone. Otherwise, I have the classic: cheese, ham, bell peppers.

Pineapple is added as a component to savory pizzas. If you think sweet pizzas are rare in Italy/Europe-in-general, in the US you get your choice of giant-ass-chocolate-chip-cookie-for-$8 or cinnamon-bun-flattened-and-elongated-into-pizza-size.

The pineapple is added to give a little sweet juicy bite to savory pizzas. It goes well with meats/mushrooms and certain combinations of vegetables (usually spinach, peppers, onions, however not the wetter ones like sliced tomatoes).

>Is there anything you'd put on pizza that you wouldn't put in a calzone?
Some foods render too much oil or liquid when cooked. I'd precook or avoid.

And, yes, I would absolutely top a pizza with a nicely dressed salad or some herbs and greens, but not a calzone.

The problem with calzones is the cheese and toppings create oil/fat that pools out.

Ricotta is NOT good in such large amounts.
