Hey /ck/, I just made my first noodle soup.
Ingredients: egg noodles, tofu, frozen vegetables, canned mushrooms, soy, sesame seeds.

I want to spice it up a bit, but 1) only one stovetop is working so I can't fry anything, and 2) I'm a terrible, terrible cook (which is why frying and then boiling would take too long). I'm not exaggerating, I'm extremely bad at this. It's the first dish I've made in like a year.

Any suggestions for stuff to add? Spices? I'll try some bouillon cube tomorrow, any flavor recommendations? Can I add some kind of onion without frying it before? Is it possible to buy seasoning mix like the ones that come with instant noodles?

Actually put work in; don't use "I'm bad at this" as a cop out for anything, or you will never be good at anything.

I'm not going to give you an elaborate or difficult scratch recipe, but you will have to do some cooking. Here are some guidelines. Both of these will start with chicken broth from cans or tetra packs (which you have brought up to a simmer in a pot), and chicken meat from a 'deli rotisserie chicken' from a supermarket (that you have chopped up. Also you will use salt and pepper. NB you don't need to use ALL of these ingredients.

TRADITIONAL CHICKEN NOODLE SOUP
vegetable options:
leeks, onions, fine chopped celery fried until fragrant in some olive oil
zucchini cut into coins
potatoes, cubed
carrots, cubed
peas (frozen is fine)
asparagus, broccoli, broccolini.(sulfurous vegetables get a bad rap in soups but they only get nasty if you cook them to shit.)
mushrooms


flavorings and herbs:
Little bit of white wine.
hardmode: veloute sauce as a base for cream of chicken soup.
bay leaf + parsley + sage leaves + peppercorns, all wrapped up in a cheesecloth. *** ESSENTIAL ***

noodles:
egg noodles
farfalle
orichiette
pastina

"ASIAN" CHICKEN NOODLE SOUP
vegetable/other shit options:
bean sprouts (added at the very last minute)
bell peppers
tofu
green beans, ESPECIALLY long beans
pea pods
carrots, matchstick
lotus root
water chestnut
baby corn (i fucking hate it, but im putting it in here anyways)
baby bok choi, or shredded napa cabbage
mushrooms (cloud ear, shiitake, whatever really)


flavoring options:
soy sauce
sambal oelek
shaoxing cooking wine/mirin
fish sauce
coconut milk
dried shrimp
ginger

spices:
lemongrass
spring onions
star anise
thai basil
fresh cilantro
la lot

noodles:
Glass noodles
Soba
Udon
Lo Mein
Buy a bunch of wonton wrappers and shred them
rice/scorched rice

This. What the fuck is with baby corn? It just tastes like how soil smells to me.
