not sure if i got the lamb right... i marinated it for an hr with olive oil, thyme, salt/pepper, and fresh garlic. let it sit at room temp for 20 mins and cooked it in rosemary-infused butter. these were pretty small, so i did 7 mins on each side. it came out soft but chewy? it was cooked all the way. is that normal? it was good either way... the texture was just off putting.

Definitely overcooked the lamb a bit from the sounds of it.
If you're not too confident just start with chump chops, forget the seasoning and just cook that bitch for roughly 3 minutes on a medium-high heat each side.
It's much easier to overcook and send tough than beef. So yeah, my only input would be to play around in the kitchen and get to know your meat.

i just got a cast iron pan so i fried some chicken in it for the first time. it was incredible. i think it's the best fried chicken i've ever had in my life.

the breading was just mixed up eggs and then breadcrumbs made from a few slices of wheat bread through the food processor with salt, pepper, and lots of smoked paprika. i used canola oil and boneless skinless chicken thighs cut into smallish pieces.

i want to make more for dinner tomorrow but i feel bad about how much oil i used for one meal.

This thread inspired me to caramelize some onions, add flour, cooked strips of chicken breast, and beef stock and pour that shit over noodles. Turned out SUPER silky and rich. Shouldn't have added rosemary. Adding the mozz was a good idea. Won't make it again, but it gives me more confidence / motivation to try both French onion soup and beef stroganoff. Overall, 6/10.

Fish looks nicely done, I like the salad, though personally I'd have tossed the leaves in dressing a bit more, they look a bit dry. Also I'd have cut up the orange into smaller pieces as opposed to wedges, but good combo

Looks good for a first attempt - not sure if its just the photo or not but try deep frying or baking the cashews first - gives added crunch and adds to the dish. Add them to the other ingredients just before ready to serve as well to keep them crisp. Celery wouldn't be a bad addition to this dish, diced carrot isn't unheard of either.

Not many sear marks on the chicken and the capsicum looks like it hasn't sweated properly, maybe try on a higher heat next time, the key with stir fry is to keep everything moving so nothing gets burnt whilst cooking everything quickly.

Nice one, but no, actually I just get subjected to what "the locals" think is good because I travel a lot for my job and they always want to take me out to eat and drink.

Sushi is almost never good outside of major cities (NY, SF, etc). The only time I have encountered an exception was, oddly enough, in Kentucky where there was a surprisingly good sushi place. I was told that there was a Japanese car factory nearby and the place mainly catered to expats.

And Connecticut is not for foreign foods. They have really good American food, but expecting sushi or legitimate Chinese food or whatever? No way, absolutely not. It may be near the coast, it may be a short drive from New York, but it's flyover country where food is concerned.
