Hey /ck/,

I’m trying to go vegetarian and I’m looking for a “guide”. Maybe a book, video series, website, or any sort of tool I can use to cut out eating meat. I don’t know a lot of tasty/filling recipes to introduce into my diet.

I’m looking for something practical, every day, and useful.

Hopefully someone here has decided to become a vegetarian and they used a sort-of training resource that they would be open to sharing with me.

"Vegetarian" does not mean "healthy".

A bunch of my group went veggie about (years) ago. (Many of us have since flipped back to omni.)

Mostly, we ate pasta & french fries. Ovo-Lacto was the norm at the time, so eggs & cheese were definitely in.

The people who were doing it with a focus on longer life, better for the planet and themselves, they mostly eat beans and fresh produce, and are often hungry - not sure if the calorie restriction is due to finance (they be poor), general scarcity of planet-friendly food, or whatnot.

I'm now back to being perfectly content eating animals raised on antibiotics.

I honestly ate like shit after the first two years. I was lacking in protein, but didn't really give a fuck. Cheese and chips every fucking day mate. I'm now back to eating meat, and I probably eat better and healthier now than I did as a vegetarian.

If you still really want to do it I would suggest learning to cook with tofu, eggs (if lacto ovo), nuts, lentils and rice. Of course you still need spices and shit. Indian food is great if you can find the ingredients they use at the store. If you're doing vegetarianism more for health reasons I would suggest first becoming pescitarian and exercising more.

Indian food is great.
Tofu is amazing since it absorbs lots of flavor.
Beans and dairy are tasty and healthy. Also vegetables.

I don't eat fish meat chicken milk animal products and I eat max fruits and vegetables all day+ drink alot water.no soda.

I buy chia+ flax seeds whole and put them in the coffee grinder at home, two teaspoons of each mixed into a big glass 50% prune juice 50% water. I drink this in the morning every other day. (1 day break in between)

I internet search: what food contains this vitamin, and do that for every vit and mineral until I have all accounted for.

every morning I do ten crunches. not alot but does alot for stomach.

when I need to poo I stand on toilet seat carefully, kneel down into squatting position hugging knees against stomach while leaning forward a little, using one arm to grab hold of wall or other useful object next to toilet.

careful to not push too hard and develop hemorrhoids, I use my stomach to push, not head or butt.

Also, does anyone have tips on how to cook dry beans from the store?

I buy dried beans from the store and try to cook them in a soup. No matter if I soak them the night before, or boil the beans first, they are always hard/crunchy/and under cooked in the soup.

I added sodium bicarbonate one time, out of desperation, the beans turned out great but I noticed the broth I cooked them became very dark almost black.

Can anyone help me with the dried beans? Is this just the way it goes when using dried beans?

You're under-cooking them. Just cook them longer. Keep simmering until they are tender.

In my experience it normally takes about 1 hour in a pressure cooker or about 3 hours on the stove in an open pot.

Different beans have different cooking times. Lentils cook quite fast. Pinto beans can take a very long time.

That being said, I just posted >>5662650. There's nothing magical about this, just keep cooking until the beans are tender. The amount of time this takes will vary depending on how fresh the beans are, how long you soaked them for, and so on.

I often buy that "15 bean mix". I soak overnight then go either an hour in the pressure cooker or 3 hrs in an open pot. The lentils are usually overcooked if you wanted to be strict about it, but that's par for the course with a mix of different beans.
When I make Mexican-style Charro beans, I start those from dry (no soaking) that that has taken anywhere from 5 to 6 hours. Just keep checking on them and simmer until they're done.

My beans come out tender, with the black beans taking around 30-40 minutes and chickpeas taking between 40 and 60 minutes. Lentils take around 20 minutes in my experience. Like other people said though, different beans have different cooking times. I find those 15-bean bag mixes are great for slow-cooker recipes, but they're probably not ideal for how you're trying to cook them.

To make a soup, if I was making it with black beans for example, I would first add the beans and cook them about 10-15 minutes to soften them up, then add in the veggies and let it continue simmering until the beans are done. If you add barley, add that in at the start with the beans. Split peas are also awesome for soups to make them thicker while adding extra nutrition and flavor. They cook quicker than most beans and then kind of dissolve into the broth

Perhaps I wasn't clear: I cook the 15-bean mix for three hours because that's what it takes to cook the larger tougher beans in the mix to the texture that I want. In other words, I cook until the longest-cooking-time-beans are tender. That means that the shorter-cooking-time-beans do end up overcooked to some degree, which is the nature of working with a mix of beans with different cooking times.

If I am cooking just lentils or just split peas then the cooking time is much less. The 3 hour figure was for the mix, not beans in general.

Haven't seen that video in a long time and I don't feel like sitting through it again but I'm pretty sure all or 99% of it was standard practice in all factory farms and a majority of "humane", "local", "organic" farms too. And that wasn't even the worst of it. Worse undercover investigations have come out since they made that video and they literally were merely showing standard practice. I think so. The large white paper sacks say "acme bread" on it, and a quick google search shows that is a bakery in California.

Depends on where in the US you're talking about. I've never had any problems finding places like that, but I doubt you'd luck finding that kind of selection in highly rural areas. Fresh bread? Sure, just not that kind of selection. Near a major city? No problem. Also, many supermarkets have bakery counters which have an excellent selection of freshly made bread.

I'm not sure. At the bakeries I shop at sometimes it's sold per pound, but more often it's sold per "piece", which will have a known weight. About a year and a half ago I just dove right in, OP. For about three or four months I was still eating fish, but even then it was on occasion. Vegetarianism seemed like this huge daunting thing ("Oh no, how will I ever stop eating chicken or burgers!") but once you start, and you pick up meat-free items at the grocery store, and you only choose veggie items from a menu, and you deny if someone offers you a bite, and you have good self-discipline... then it's actually really easy. he actually is, during the day when Im at work he usually stays in the house so my dog doesnt get lonely but he sleeps outside, He cant make it up on the couch anymore though :( and he loves to run around and play with my dog. I have 7 acres and the people I bought it from (my neighbors) have 43 more. Its mostly woods but I have a decent area for a large garden and a good size back yard which is where my pins are. Its funny he'll try to keep up with my dogs but cant so she runs ahead and then loops back around to catch up.
