i haven't met a chipolte sauce I liked, so I just blend cans of chipolte in adobo, add a little white vinegar and what have you, strain, and bottle.

well they both come from chilis.
Sriracha is more of a chili paste, Tabasco is kind of vinegary, but not nearly as egregious as some hot sauces.
They're both very much flavor > heat, but still have some heat.

Do you guys refrigerate your sauces?

I keep multiple Tabasco varieties, Sriracha, Cholula, Dave's, and a few others in my house at all times. I usually keep them in the refrigerator, but I have heard that refrigeration isn't really necessary.

I do if the bottle says to, no biggie. Plus sometimes I don't through them quickly, I use fresh peppers a lot too so I don't go through them very quickly.

It really depends on the manufacturer's recommendation. They made it, I'll follow the rec. Once opened some of them deteriorate over time, so it's best to keep them in the fridge.

Pic related, but I can go through this fast it's so good that it doesn't need refrigeration.

jezze, iu actually got that set for christmas one year.it was a shame because I like original tobasco. almost as good as texas pete or crystal. Alas, of the five only one was worth a damn. the original. nothing says last minute christmas didnt know what the hell to get you gift like 5 sauces and a board from wally world. aparrently the board was for smoking fish but pretty rough looking. Honestly I have great respect for the Mcillheny family, south padre island. Marine Corps Generals and Commandants ( ex Air force officer and you don't want to be fucking with the Corps.)
