Only some tomatoes are good. Most are the grocery store ones on the vine or some pink thing like they serve at subway. When you get the really meaty ones (I've only had them from friend's gardens) that are deep red, you can't beat them.

Also, a lot of canned ones are shit for certain recipes. San Marzanos are necessary for pizza and a lot of red sauces but regular canned ones work fine in chili.
