The people who live where the food originates or is best known to come from are more likely to have cooked the food for a greater period of time and with the correct tools, ingredients etc.
This may not mean it is the best but it is a great starting point for those unfamiliar with the recipes.

Because the very nature of inauthenticity means that stuff will inevitably be missed out - lost in translation, if you will. It doesn't mean the authentic version is automatically better but it's always worth checking out to see what's missing from your Americanized (or whatever) version.

Also on another level simply because authentic food usually involves cooking the breads etc. yourself, and just using less shortcuts in general, which is pretty much guaranteed to be tastier than using storebought versions.
