The cheesy bean and rice burrito can not be directly recreated since the Mexican (red) rice was entirely replaced by the Latin (green) rice.

However, many stores still have it on the menu, and all Taco Bells carry its ingredients. These are as follows: Bean, Rice, Nacho Cheese, Creamy Jalapeno Sauce, and Pico de Gallo. The CB&R on the menu actually no longer comes with pico, but you can add it to make the original burrito in its proper form.

If a store does NOT carry the cheesy bean and rice (I'm actually not sure if there are any that don't, but just to be thorough here), order a beefy cheesy burrito, add creamy jalapeno sauce and substitute beans for beef. This will get you a cheesy bean and rice for like $1.10, depending on what that store charges for the CJ sauce. The pico de gallo is optional, and should cost around $.35 to add.

If you talk to the RGM (general manager) at a Taco Bell, he may be willing to sell you a bag of it. This isn't technically allowed, but I've seen it happen. Try a few different stores and you should get a taker.

The bag just has to be heated via hot water immersion, and you'll have delicious nacho cheese ready to serve. It only comes in pretty large bags though, so you'd have to be prepared to have a lot of nacho cheese.

The quesarito was introduced as a promotional (read temporary) item, but due to its popularity, there's talk of it hanging around. It could definitely become a permanent item, but I'd say the odds still aren't in its favor.

Custom orders are fine as long as they aren't ridiculous. Substituting sauces and stuff is super easy, just don't be a dick if you get charged extra for it. Sometimes you can get it substituted at no charge, but for most modifications, it has to be charged, even if you're removing something to put something else on there. Ordering things prepared differently is a little different. A lot of things actually violate health codes, like we definitely could NOT fry a doritos shell, not only because it wouldn't work at all, but because cheese powder in the fryer is a no-fly zone.

The only thing I really care about with modifications is that you be cognizant of how busy the store is at the time, if you're ordering something pretty outlandish. As a rule of thumb, doing crazy custom things in drive-thru is sort of a dick move, since drive-thru service is timed, and there's no way for kitchen workers to ask you for clarification on how you'd like something made. Subbing meats, sauces, additions, etc. is really easy though. When I say outlandish I mean like... a taco salad with every ingredient prepared separately as a side.

Something that isn't a big deal but is kind of a pet-peeve of mine is when people make custom orders and do it in a really stupid way, like instead of saying "A chicken burrito, grilled instead of shredded chicken" they'll say "A chicken burrito, but I don't want none of that nasty little chicken, I want the classic chicken." By the time they've got halfway through their sentence I already know what they mean, and keeping orders simple is the best way to get it done in a timely manner with a high degree of accuracy. The more you say, the more likely you are to confuse the order-taker into making a mistake.

Our sauce costs money. When you have hundreds of transactions per day, giving 2-3 fewer sauce packets to each customer makes a huge difference. Our standard is a surprisingly low ratio of 1 packet to 2 food items. The funny thing though is how little sauce some people use.
