Sushi grade fish, around here, cost about 30% more than regular fish. Excluding organic farm raised, which costs about 50% more than normal fish. Normal being the shit the local fishermen bring en masse to the markets. Though, if you really want to go cheap, look for kids fishing in the mornings before school and ask them if they're selling their catches. You can get super cheap quality fish. The only worry is how long the fish was sitting in some kids bucket with god knows what else.

the point being that the fish used for sushi is of higher quality than other fish used for cooking. Organic farm raised isnt necessarily higher quality, but you pay for the fact that its organic and farm raised so you can feel special or whatever.

Tuna and Salmon are DELICIOUS raw. Especially fatty tuna. It's so smooth and melts in your mouth and has a nice flavor to it.

Mackerel is kinda fishy, but it's a hearty meaty fish when raw.

Raw octopus is good and chewy too.

Fish eggs are good with a little rice. They compliment each other well.
Also, the unagi and shrimp are both cooked.

Uni is only good raw. Cooked, it taste like ass.
