You clearly have no idea what is going on. Pretty sure almost no one starts off with imperial stouts and then progresses to IPAs, IPAs are usually the second set of good beer go to after the most entry level of craft beer like Fat Tire

There are two distinct paths people take

Path A: The uneducated redneck
1. Cheap Beer, mostly while underaged, most of this group doesn't go to college these days or go to some shitty southern school
2. Bud Light, almost all fo these people become loyal bud light drinkers
3. Euro beer, these people are so backwards and uneducated that they still have the 80s mentality that European beer is superior, so if they are trying to impress they will move on to a Heineken or another mediocre euro lager

Path B: Normal white dudes born after 1985
1. Cheap beer: everyone drinks cheap beer in high school college until they are 21 when being selective becomes much easier. This group usually goes with High Life or PBR but willing to go with whatever is on sale if its cheaper
2. Central European Lagers: This one occurs while still in college just before they come of age. Many of them have spent a semester abroad and heard outdated stereotypes from the 70s and 80s during america's light beer boom. These people are rather misguided, but their hart is in the right place
3. Entry Level Craft beer: Upon turning 21 they can start buying whatever they want rather easily and decide to start experimenting. Usually the first step are the most well known craft beers and psuedo craft beers like Leinies/Blue Moon. The entry craft beers vary quite a lot by state, usually something lighter from the states most commercially successful craft brewery along with the big national craft breweries flagship beers (Fat Tire, Sierra Nevada and Sam Adams)
4. IPA: next these people discover how delicious IPA is. They start gravitating to big west coast IPAs, but come around to superior midwestern style IPAs (like Two Hearted) by the end

5. Stout: by this point people rarely give up the previous tier, they usually just add to it (not sure where OP got his ridiculous exclusivity ideas from). Generally people go toward american style stouts as they usually taste better than old fashioned dry stouts, and move toward delicious imperial stouts, often flavored with coffee. Eventually adding in barrel aged stouts.
6. Expansion: People then typically add other styles like rye beers (though many of these also fall in the IPA category as many of the best IPAs utilize rye), Barleywine, legit hefewiezen (some wheat beers also fall in the entry craft beer category in some places) or belgian style beers. Belgium being one of the few european locations making great beer traditionally really shines here as people broaden what they drink
7. Weird Stuff: here is where curiosity really takes over. Smart people are always driven by intellectual curiosity, and they want to keep trying new interesting sounding things. This bring sour and smoked beer into the fold and pretty much anything that sounds new. A lot of these beers amount to one time tries, and people still drink beers from the previous 3 steps regularly. Also between 6 and 7 people often begin trying homebrewing. This is currently the final stage of beer enlightenment where people try a wide variety of new things and like all sorts of great styles

Still here. Straffe Hendrik is very good. I went to the brewery two years ago and had some tasting there.
Lindemans Faro Lambis is nothing overly special, but god, I love this beer in the summer. Sweet and sour.
Corne La Triple is also very decent.
Mort Subite Kriek is ok for a Kriek, but a bit on the sweet side. I like a good kriek very sour. If you are into these kind of sweet drinks your Lambic Faro is pretty good and you should try Liefmans Fruitesse with a lot of icecubes.
Urthel also good.
Triporteur, Prearis, Pitbull and Loterboll I don't know.

All in all, you are going to have a great time tasting.

What the fuck are you talking about? Educate me if I'm wrong, but Chimay is a Trappist type beer.... brewed by fucking monks for ages in ancient barrels. It's like $20 bucks a bottle, like 15%ABV, and I highly doubt any "big brewery" made it.

There's only 9 other breweries that are Trappist. (brewed by monks)

Dogfish head has a whole line of revived ancient ales from historic recipe finds, whether brews or barleywine recipes in their "rarities" collection. I like a couple of them very much (Chateau Jiahu, Sah'tea, King Midas) , and the rest are kind of do-once, kind of opposing flavors kinds of recipes (Theobroma), though they work with food pairings, all of them. There's got to be at least 25 recipes they have done at least once, but you'll find that your local seller might only have 1-5 at a time. Look around. A lot of them are recommended for cellaring and saving for later..

Are you shitting me? People have been brewing for thousands of years, but have only understood the biological process for about 200 years. Brewing mash used to be open to the elements and allow whatever the hell was in the air to settle into the beer. A little bit of yeast would find its way in and begin fermentation.
