Stone Fruits!

A stone fruit, also called a drupe, is a fruit with a large "stone" inside.Examples of stone fruits are peaches, plums, and cherries. Fresh, canned, jellied, any way you want but your dish must star one of those fruits.

While you're perfectly welcome to make a large spread of food, please make sure there is clearly a "main dish" because that is what people will be voting on.

Only one person will be eliminated after this round. The remaining four will face off in our final round next week!

>> No.5392723

VOTING GUIDELINES

Voting follows an 'Iron Chef' style scoring system. This means you, the people of /ck/, will judge each entry individually instead of deciding on what you feel is the "best" dish.

Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet your expectations for a category.

-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)

The distinction between Presentation and Appeal: If someone submits an artfully arranged but burnt steak as an entry, it may score high in Presentation but low in Appeal.

This is going to be really, really hard for me because there are no stone fruits in season and the very few they have at the store are insanely expensive. No idea how I'll pull this one off...

Yeah, I was just thinking that, too. Here, at least, I think the only stone fruits that are in season now are some of the plum varieties. There might be some early cherries, I'm not sure. BUT, I love stone fruits, so this should be a fun round anyway.

Little friendly education. Not trying to be a douche, but you can take it as you like.

>Fruit:
Basically it's a fruit if it is the plant organ that produces seeds(uterus) coming as a result of pollination. Tomatoes, peppers, avocados, etc, are all the 'fruit' of their respective plant.

>Vegetable:
Any part of the plant, excluding the fruit or seed.

BONUS:

>Berry:
The fruit of a plant, thick skin, surrounding a fleshy body that feed a core of seed(s). Blueberries, grapes, oranges, avocados.

>Drupe:
Single stone protected by fleshy body, wrapped in a thin skin. Cherries, plums, nectarines, etc.

Pome:
Thin skin, surrounding a FIRM body that protects a complex housing seeds. Apple, quince, pear, etc.

Hope that clears some stuff up. And maybe y'all learned something for the day!

Ok so, I had planned on doing like a chipotle-plum marinaded pork chop but they had no plums so I had to figure something else out.

So I made an upside down pound cake.

It has yellow and white fleshed peaches, apricots and prunes (plums).

The glaze is butter and brown sugar with a tiny bit of cinnamon. The cake is a traditional poundcake with the zest of a lemon and some peach infused seltzer water.

I gotta say I was fucking panicking, I've never made an upside down cake nor have I made poundcake from scratch. My kitchen was smoking like fuck. But that produced an amazing glaze on top with caramelized sides and one of the tastiest most moist cakes I've ever had. I'm not a big dessert fan but the combination of tart and sweet flavors was just great. This is going to definitely become a staple in my house. Or as mom says "You'll keep making this once your done with your contest, right?"

Unfortunately it's not a very pretty dish, but flavor is much more important to me than presentation as a home cook.

I'll post a vert at some point.

I didn't do a vertical for the shrimp, because that seemed unnecessary. But, I seasoned them with garlic, jalapeno, sumac, black pepper, salt, and almond oil before grilling.

And one more, just because I took too many pics. :)

This was actually my favorite component. Not just because of how it went with the dish, but because I immediately had more ideas on how to use it once I tasted it. While I was getting everything ready, I ate a little of it on top of some crackers with cream cheese, absolutely delicious.

400ml milk, 50g butter, 3 medium eggs + 1 yolk, 3 tablespoons of flour, about 400g of peaches (I used tinned), 5 tablespoons of sugar, a pinch of salt and a dash of vanilla extract

I tried to make it look pretty but once i poured the batter into the tin the peaches just floated up randomly

grease up the tin, warm the milk, mix the ingredients and pour into tin

cook at 200C for about half an hour or until set around the edges and jiggly in the middle

Sorry, this is a sunchoke and shrimp dish. The stone fruits are just garnishes. Jellied bacon is awesome, but the plum is trivial here. I would love to eat it though.

that's wrong tho.

Given you've stated a definition of fruit based on the scientific one, I feel obliged to point out that there is no such thing as a vegetable in science.

Tomatoes are both vegetables(culinary) and fruit(scientific), but they are not culinary fruit

I really liked this, and wish I could have tasted it, but I still had to knock points off of the challenge goals a bit, since the fruits used aren't prominently featured, even though I realize they are in there.
