Voting follows an 'Iron Chef' style scoring system. This means you, the people of /ck/, will judge each entry individually instead of deciding on what you feel is the "best" dish.

Dishes are scored out of a total 20 points, based on 4 categories (worth a maximum of 5 points each); Presentation, Originality, Appeal and Challenge Goals. You may award 0's if you feel the contestant did not meet your expectations for a category.

-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)

The distinction between Presentation and Appeal: If someone submits an artfully arranged but burnt steak as an entry, it may score high in Presentation but low in Appeal.

FINALLY, I have my webs working again (after waiting 5 hours for the guy to show up). Looking forward to this. Last year I tried really hard to make things I though everyone would like, but this year I'm kinda just doing it for fun and to make things I've wanted to try or like. :) (which isn't to say that I don't want everyone else to like it too, just that I don't feel that pressure, ya know?) I'm a long-time picnic and outdoor family reunion person, and have made tons of things that are good for eating outdoors. But I think I'm going to go classic and make things that I've always loved to eat at picnics and family reunions (my family always has their reunions outdoors, on their ranches and property, so there's usually bbq, and then a metric shit ton of side dishes, salads, and desserts) Fun stuff! I'll tell you right now, though, I WILL be making more than one dish. I'll probably make like, 5 or 6. And invite all of the ooooh, three people I know out here to come and help me eat it, lol.

This is so true. The best tamales I've ever had in my life were from the maintenance guy at the mall I worked in years ago. He'd come by every Tuesday and ask how many we wanted, and then bring them in an ice chest on Fridays. I'd always get 2 dozen spicy, 1 pork and 1 beef. His whole family got together and made them. Yeah, I'm a bit confused about this point. At first I thought the challenge goals would basically be that you can cook it at home, and take it out no problem, but strictly speaking BB says that "anything goes as long as it can be mobile", so things like street food or barbecued food fit the bill.

I also feel as though those who aim for food that can be taken to work will have more trouble with presentation than, say, foods for a picnic.

I'm having fun brainstorming about this. Yes, I'm making several things, but some of it's serious food, and some of it is just for "picnic fun". Also, I can say right now that I won't be posting until Saturday, because I don't have enough time during the week this week to cook before then, and also, I've invited two other people to come along for the picnic, so Saturday it is.
I've gotten super nostalgic thinking about all the great dishes I've had a company picnics, family reunions, and private picnics throughout the years. Sniff.... I wish I could make everything I used to love, but I don't have enough money or time for that, or know enough people, LOL.

Also, on a completely separate note.....I was thinking of doing a weekly Food Gore thread, where I take old scary mid century recipes and re-do them for the modern palate, just for shits and giggles. (I have a huge collection of old food gore cookbooks that are just sitting on my shelf benefiting no one but me). What do you think?

Yea it can be dangerous to take birds outside, but there are a few ways to make it safer for them - wing clipping, flight harnesses, recall training, etc.
Birdy is a lucky one, he gets to go out every day and enjoy the sunshine with me. I spoil him so much, but to be honest it's just good for me too, getting off my ass and out of the house.

I made mine yesterday, but didn't have time to post it before now. A staple southern Dutch salad, Kouw Sjottel/Koude Schotel (Limburgisch/Dutch), which literally translates to cold dish. A potato/pork salad with pickles and pickled onions, and egg. Serve with bread, or as a salad accompanying a barbecue

You could spice it up in different ways, for summer time I recommend replacing the pickles with pickled bell pepper or chili pepper. Or just add chili instead of paprika. You could also add ham wrapped asparagus, which I would have I had some more money. Yet the taste is supposed to be a bit sweet/sour. It's very rustiq and hearty, though refreshing in the summer or late spring. It has many varieties, but I love this one the most

The quality looks good! I love your colour scheme between the food and birdy. You don't need to worry bout not joining in last round, either. I'm sure nobody took disrespect. I took one point off for challenge goals as I personally feel like it's a bit too much to be taking out, even for a picnic. The shotglass for the sauce kind of put it over the edge since it seemed unnecessary. The flavours seem really good, though, and really good for a Summer picnic!

This looks good! I'd certainly like to try it. It would have been nice to see you make the pickles, though, and the ham detracts from the presentation a bit. Maybe you could have cut them into neater squares, and possibly thinner. I like the way you did the presentation over all, though. Why did you cut the pork into little cubes, by the way? Just to manage it easier? And then did you shred the pork a bit afterwards? I think I'd like to try making this myself!

I cut the pork in such little cubes to make them easier to cook. And I didn't shred them, once you cook them for a few hours they fall apart at the slightest touch.

I also forgot to add that you have to drain the potatoes and apple after cooking, try to have as little stock possible in the bowl before mixing

Overall it's going to be pork tamales, the potato salad I've posted, elotes (grilled seasoned corn on the cob), and a canteloupe agua fresca. Mexican picnic!

You're absolutely right, if you were to make only one or two of them at a time, the work load seems a bit much. However as you add more portions, each additional portion you plate is done quicker.
When I thought up this meal, I had a rather large picnic in mind, with upwards of 15 or 20 people to serve. This dish was designed to be done in a line style manner - to line up a row of empty plates and churn out lots of them quickly and freshly.
For anyone that hasn't a clue what line cooking is, consider the pear salad: Get a massive bowl, throw a load of the three ingredients in (the rocket leaves, wasabi peas and pear, the mandoline slices the pear in seconds), add enough dressing to the mix and toss the whole lot wildly. Then head over to a row of plates and place a fistful of the completed salad to the side of each one, spending only 2 seconds at each plate.
Placing a wedge of pre-cut quiche on each plate would also take about 2 seconds each. The prawns would take a little longer, depending on how well you want to present it.

But if it's a really small picnic for a couple of people, I still agree with what you said.

Ok, so this is everything packed up to go.

I made shredded pork tamales, elotes with cotija cheese, cilantro, chili powder, sour cream, mayo, and a lime wedge squeezed on top, pickled red onion potato salad with jalapeno, and the orange drink is cantaloupe agua fresca which is pureed cantaloupe with water strained to remove the pulp with lime juice...

All of these can be served hot or cold and taken to go, albeit the corn can be a bit messy :)

Yeah, tamales aren't very pretty by themselves but they're also just about the most delicious thing you can stuff in your face... LOL
I think it's important to have a really pretty side dish when you make them to make up for the tamales cuz they can be downright butt ugly.

I hope you try to make some of this because it's all soooo good, and particularly the flavors work soooo well together. The creamy salty sweet of the corn cuts the vinegar of the potato salad and the vinegary potato salad gives some bite to the masa in the tamales... And of course the agua fresca is just mild and refreshing enough to wash it all down.

I'm steaming more tamales for myself tonight hehe.

No vertical this time but I slow cooked the lamb in soy sauce, shaoxing wine, and star anise, then shredded it and reduced the stock, which I put in the fridge to gelatinise. I julienned carrots, spring onions, cucumbers, and sundried tomatoes in olive oil. The rice I cooled and mixed with black rice vinegar, sugar and salt.

The last step was just combining the vegetables, stock jelly, and lamb in different combinations and rolling them up.
