i made some pretty decent pasta tonight.

let that simmer for a while and kill that bottle of wine you opened. when it's reduced to thicker than i would have necessarily wanted, boil some pasta.

also season with salt and pepper

Looks great OP. Nice use of soffritto. I would have added some garlic and maybe basil or oregano. A tiny bit of dry red chillis. Maybe a dash of balsamic vinegar.

thanks, it was actually pretty tasty. i definitely plan on using less meat or more tomatoes/wine next time, since the resulting sauce was very thick and didn't coat the pasta as well as i'd hoped.

and i agree that it probably could have benefitted from some garlic for sure. i was also only using what i had on hand today, which is why you saw no fresh herbs.
