I love fish heads. I have some salmon heads frozen that I need to use up this week. Gonna make a soup, or maybe a curry with them.

Yep, this right here. I've got a couple friends who are into deep sea fishing. Whenever they get a big fish I get the head and use it for curry.

They're also great for making fish stock for soup or chowder. For smaller fish like trout I also like to split 'em in half lengthwise, briefly brown them under the broiler or in a pan then toss them in with a pot of rice. It gives a great flavor to the rice plus it steams the head at the same time so you can pick off the meat. It works in both a normal pot and in rice cookers.

Is that how you use it for curry? In with the pot of rice? Or do you pan-fry it and cook it with the other stuff and cook it down with coconut milk?

Fish head curry is kinda a big deal in SEA. If done right it's amazingly good cause the meat on a fish head is super tender.

Yeah I always grab the head meat ( he he ) first off when we have a serandeado ( whole stuffed grilled big fish ), and at the local marina the old gringos only want thier fillets, so the guys take away the big heads for soup.
There can be pounds of meat on a few dorado heads.
