Assuming you WILL get sashimi grade fish (i have my doubts), cooking rice correctly will be by far your biggest problem.

Hate me all you want but the only sashimi I've tried are supermarket & buffet sashimi's, & from my experience they felt somewhat soggy, does a real sashimi tastes better? like meaty sticky sort of taste? cause that's my impression when I see some of the pics you guys posted.

Each type of raw fish has it peak of taste. Tuna can not be too fresh or it is a chew fest. Shrimp should be just dipped in hot water, when you bite into to you should get a snap like a sausage and a sweet flavor. Octopus should be firm, but not tough. Also the best sushi places don't use fresh fish because the flesh would be too firm. The soggy mouth feel comes from the rice becoming water logged because it is getting moisture from the fish that is on top of it. Sushi is served not cold but around body temperature, sometimes they play with hot and cold aspects of the sushi. But ya most people here have not had good sushi and I think none had great. Also soggy water logged rice makes me sad as fuck.

There was a sushi bar at this one Chinese restaurant I went to, and the octopus was so rubbery that it wouldn't break up no matter how much I chewed. Buffet sushi can sometimes be good, but don't load up your plate with it unless you at least try it first. There's a huge difference in quality if you go to a restaurant that actually specializes in sushi. Too bad there's only one or two sushi restaurants in my area.

Depends on the restaurant, but that's not an outrageous price. Sushi in Napoli costs about the same as what you quoted. Sushi in Zürich, too. Depends on where you go to buy it.

I love sushi. I love the subtle flavors, the texture of the various fish meats, everything

However, I usually only get it when i hit up one of the two Chinese buffet places I know - both of which have about 4 or 5 different kinds of generic sushi as part of the buffet...

Mind you, I eat a lot of those lil things when I'm there - get a lot more bang for my buck than I would at an actual sushi place - but at the same time I'm well aware that its pleb tier quality...

Here, I made a screenshot to help, since you're so cute.

I usually just look at the seafood section at the grocery store. If you've never had it before but want to cook it, cook it either quickly at a high heat or slowly at a low heat. Otherwise get it at a restaurant.

I found use of soy sauce and wasabi across the world in Japanese restaurants very interesting:

USA - regular soy sauce and EXCESSIVE use of wasabi (i saw people cry after eating it), also not real wasabi but a substitute made look like wasabi

Western Europe - SWEET soy sauce (packed with actual sugar) in addition to regular soy sauce and moderate use of wasabi

Japan - minimal use of only regular soy sauce and very little wasabi (wasabi doesn't come on the side of dish but placed as needed during preparation)
