Question.

Will chopped, raw onions lose their potency if left out? I made a salad (pic related) with finely chopped yellow onions, and it's really good but it'd be perfect if the onions were slightly more subdued.

I don't think so.

I used minced and dehydrated onions. When I re-hydrate them, they still taste just as strong as freshly minced ones.

You need to toss them in some wine vinegar or something to take the edge off I cant be bothered to look it up exa tly. That's how you make california veggie sandwiches

Replace with shallots or spring onions. Those are better for eating raw.

Somewhat, yes, they become sweeter and less pungent, but remain somewhat acrid.

Soak onions in cold water. They leech out a little of the potent juice, and they actually crisp and become fresher.
